    It is simply a sweetener! Half as sweet as classic sugar and without impurities, it stays dry and resists humidity longer while remaining shiny, yes you can guess where it will be useful...

    It's a perfect substitute for making sugar decorations! It's what we used to make our geode cake pops, but with a little creativity you can also make windows, mosaic, gems, pulled sugar, sugar bubbles, lace, in short, any transparent sugar decoration for amazing cake designs.

    Directions for use:

    1. Melt isomalt in the microwave at about 700 W in a suitable bowl or in a saucepan, heating it up to 170 °C. Be careful not to burn yourself at this stage! The use of gloves is strongly recommended.
    2. Stir the isomalt every 20 to 30 seconds until it is completely melted.
    3. Then place your bowl in a cold water bath for about 10 seconds to temper your isomalt.
    4. Optional step: add a pinch of food coloring or a few drops offood flavoring and mix well.
    5. Once tempered, you can manipulate it into the shape you want by spreading it on a plate, blowing it, etc.

    Don't hesitate to bring a thermometer for more precision and a baking mat can also be useful for sugar work.
