Food grade glycerin for pastry and sugar paste
You don't need a magic wand in baking, you just need glycerin:
- If you add a few tablespoons of glycerin to your cake batter before baking, it will act as a preservative and allow your cake to keep longer.
- Glycerin also makes a royal icing smooth and shiny: add a dash of glycerin to the royal icing to prevent it from drying out and it will make it much easier to apply to the cakes. Add 1 teaspoon of glycerin per 500g of powdered sugar for a smoother set and 2 teaspoons per 500g for a nice shiny finish.
- It prevents sugar crystallization: a small amount of glycerin is enough when you heat sugar and water at high temperature to prevent sugar from crystallizing. Glycerin used in candy making gives your caramels and truffles a soft and creamy consistency.
- Glycerin can also be used in the preparation of a buttercream to make it as creamy as possible!
- Glycerin can prevent buttercream from drying out and forming a crust. It helps keep your buttercream smooth and silky.
- Glycerin brings back to life a sugar paste that has been sitting in your cupboards for too long: by adding glycerin to your sugar paste, you will magically bring it back to life! Start with a few drops until the sugar paste is soft and smooth again!
