Carboxymethylcellulose (CMC) is a sodium salt derived from cellulose. Unlike cellulose, it is water soluble and can be used as a suspending agent, stabilizer, film former or thickener.
CMC is used in gluten-free baked goods because it adds viscosity to the dough and volume to the bread, as do the proteins in gluten. It also works well in fillings as a thickener and in icings as an agent to slow down the crystallization of sugar.
MASSTEX Pure CMC is a premium quality, additive-free thickener and anti-caking agent.
This CMC powder can be used in ice creams and serves as an emulsifier, it can be used as an ingredient in sugar doughs to make it easier to work with, more elastic and will help to dry faster. It can also be used as a stabilizer in creams, among others.
Widely used for cake design, CMC powder or tylose is an essential for all cake decorators.
Ingredients: carboxymethyl cellulose E466.
Average dosage: 1cc of cmc for 250g of sugar paste
To make edible glue: 1 part cmc to 30 parts water.
