Start by pouring dark or milk chocolate couverture into the molds. Any bubbles or imperfections will rise to the surface of the chocolate. Abraded or scratched molds make the finished chocolate look dull. Avoid washing the molds with abrasive cleaners or scouring pads to keep the molds in good condition while avoiding dull finished chocolates.
The chocolate must be tempered to obtain a shiny exterior. A bowl placed over simmering water in a double boiler will melt the chocolate. You will need a chocolate thermometer. Chocolate that has been tempered properly should have a nice shine and break cleanly when broken.
