Ammonium bicarbonate is an additive (E503ii) that comes in the form of a white powder. Also called "English salt", "baker's ammonia" and "Hartshorn salt", it is used in pastry making for its leavening action.
It dissolves in water but not in alcohol and is active from 60°.
To use for the confection of cookies, gingerbread, macaroons.
Dosage: 1 teaspoon for 500 grams of flour
