Gel or paste dyes
These food colorings have been popular for a few years. They have revolutionized pastry making thanks to their concentrated texture which allows the use of very little coloring. They are perfect for coloring macaroon shells without altering their texture. They can also be used to color your icing and cake batter. Their use is unlimited! Wilton is a pioneer in this type of coloring. Since then, many brands offer gel dyes with amazing results: Funcakes, Decora to name a few.
A new brand of gel dyes: Colour Mill dyes. These oil-based gel dyes will give you spectacular results. Black or red icing can be so hard to achieve, but you can get it with Colour Mill red and black icing.
Food coloring powder
These food coloring powders are to be added to a preparation in small doses. Their advantage is that they do not modify the texture of your preparation, like a macaroon device for example. A tip of a knife is usually enough to color your mass.

Liquid and food colorants for airbrushes
Liquid dyes are suitable for drip application. The colors obtained are less intense than other types of dyes, which is why they are ideal for use with a spray gun or airbrush.
