Dummies are Styrofoam shapes that can be used to complete a wedding cake.
If you want to create a tiered cake, but only one cake will be made, these faux Styrofoam cakes will create the perfect illusion of a gorgeous wedding cake. Cover the dummies with sugar paste and create your gumpaste or sugar paste decorations as you normally would. Proceed to assembly.
These fake cakes are also great for beginners in cake decorating. They cost less than the real cake and are much easier to work with. Wedding cake support rods are not necessary with cake dummies, unless they are used in combination with real cakes. Often the real cake will be the top tier, so no dowel rods are needed.
The most commonly used cake dummies are round or square.
How to use a dummy cake?
Cake dummies are decorated the same way as real cakes. Place the dummy on a cake drum and attach it with double-sided tape or hot glue. You can use buttercream, royal icing or sugar paste. Buttercream is applied just like on a real cake. Just apply the buttercream and smooth it out as you would on a regular cake. The royal icing is applied in the same way as the buttercream. Then smooth with warm water.
Covering the dummy with sugar paste requires a little more work. Check the surface for imperfections. If you are stacking 2 dummies to make a larger cake, the space between the cakes should be covered with royal icing or buttercream. Use the buttercream to cover the spacing, then smooth. Let the buttercream dry for 20 minutes. Then you can roll out your sugarcream and apply it as usual. Tip: Apply a little water with a wide brush to help the buttercream stick to the cake dummy.
To reuse your dummy cakes, remove the sugar paste, scrape off the icing, then wash the Styrofoam base with water and dishwashing liquid. The sugar paste and royal icing usually come off easily. Buttercream may leave a little grease from the butter. Be sure to let the foam dummies dry completely before storing them until next time.
How long do dummy cakes last?
If you use royal icing, you can keep your beautiful fake cake for months and even years. Many storefronts use fake cakes for months. You need to make sure they are not exposed to direct sunlight.
Can you cut a dummy cake?
Yes, it can be cut with a sharp knife. If you are carving, a foam cutter is necessary.
