Directions for use:
To assemble the entremets, cover the circle with a rhodoïd ribbon to ensure easy removal from the mold later on.
Cover the edges and the bottom of the cookie. Add the mousse and smooth it with a spatula. Place the dessert in the refrigerator. Remove the circle just before serving, on a cake stand.
