Agar agar is a gelling agent in the same way as gelatin. The difference is that agar agar is initially a seaweed that is reduced to a powder and therefore a 100% vegetable product.
It is used to make bavarois, jams and jellies... To makeagar agar set, it must be brought to a boil (unlike gelatin).
Eight times more powerful than gelatin, be careful to dose sparingly.
