History of the macaroon
According to popular belief, macaroons are of Italian origin and date back to the 8th century. This pastry-food was introduced to France in 1533, when Queen Catherine de Medici of Italy married King Henry II of France, and her pastry chefs brought the macaroon recipe with them. At the time, these cookies were made from almonds, egg white and sugar.
It is believed that the macaroons were served in 1581 at the wedding of the Duke of Joyeuse in Ardeche.
In 1682, when King Louis XIV decided to stay at Versailles, macaroons were served to guests as a welcome gift. Until then, macaroons were considered exclusive to royalty. The tradition continued until the fall of the empire in 1789.
Originally the macaroon was a "simple" cookie. It is later that it is enriched with fillings.
There are several recipes for macaroons depending on the region of France. The Parisian macaroon is the most famous. In the 1830s, macaroons were assembled like two cookies and filled with jellies, spices or liqueurs. The credit for the Parisian macaroon goes to La durée, the famous Parisian tea room, at the beginning of the 20th century.
