    What is cream of tartar?

    Cream of tartar is an ingredient that can be found in American pastry recipes or in cosmetic products. 

    Not to be confused with baking powder or tartaric acid, cream of tartar is a salt found naturally in grapes that is used as a leavening agent in baking powder. It is a 100% natural ingredient that comes in the form of a fine, white, odorless powder with a slightly acidic taste.

    What are the uses for cream of tartar?

    Cream of tartar: ideal for stabilizing your aerial preparations

    Cream of tartar is mainly used to stabilize egg whites or whipped creams. Cream of tartar helps maintain the texture of your preparations so that they keep their shape even after baking. It is therefore the ideal ingredient to perfect your macaroons, meringues, whipped cream, cloud cakes, soufflés, angel food cakes or even extra soft Japanese pancakes.

    Cream of tartar can act as a leavening powder

    The cream of tartar will give your sponge cake a tangy taste and will help to make your preparation rise. This is one of the ingredients to make homemade yeast for those days when you run out of baking powder but feel like making a good cake. Simply mix one part baking soda with one part cornstarch (such as cornstarch) and two parts cream of tart, and store in an airtight jar away from heat and moisture.

    Cream of tartar prevents sugar from recrystallizing

    Cream of tartar is used to form invert sugar. By preventing the recrystallization of sugar, the sugar forms a syrup that absorbs moisture more easily and allows your cakes to stay moist longer.

    These are the main uses of cream of tartar in baking but it can also be used for various other purposes (cooking, cleaning, etc...).
