Fat-soluble food coloring for chocolate 

Fat-soluble food colorants are oil-based colorants. They are commonly used to color chocolate. Unlike water-based food coloring which thickens chocolate, oil-based coloring is easily incorporated. Oil-based dyes are essential when coloring chocolate. They are formulated to specifically bind to oil-based and fat-based products.

These dyes are also used in confectionery.

There is a wide variety of colors to choose from when coloring your white chocolate. Be creative!

These food colorings can color in the mass all your preparations containing fat. Color a butter cream for example, the result will be perfect.

Why use fat-soluble colorants for chocolate?

Chocolate, whether it is couverture chocolate or not, consists of fat (cocoa butter) or other hydrophobic compounds. In the case of couverture chocolate, the cocoa butter is solid, i.e. a fat present in the cocoa beans.

The same is true for melts. These chocolate-like pellets used to make pop cakes and cakesicle pops contain vegetable oils instead of cocoa butter and therefore must be colored with oil-based colorants.

Don't try to use water-based food coloring for chocolate, as it won't mix well and you'll end up with something thick and mushy. Instead, opt for oil-based food coloring for chocolate to achieve a smooth consistency and an eye-pleasing finished product.
