What is a cake drum?
The cake drum is a thick cardboard support that allows you to present your cakes. It is a type of cake board.
It is usually 1 cm thick and has become very popular in recent years because it allows you to quickly present your cake. A small satin ribbon and the decoration is finished. For sugar paste cakes, the cake board is usually covered with sugar paste.
Should the cake drum be covered with sugar paste?
When using cake boards, an important but often overlooked step is to cover it with sugar paste before placing the cake.
It all depends on the coating of your cake board. If it is not foil coated, it will absorb the grease from your cake. If you throw your cake board away after use, this is not really a problem. However, if you want to reuse the cake board, it is best to cover it.
How to cover a cake drum with sugar paste?
- Roll out your sugar paste so that it is at least 2 mm wider than your cake board.
- Prepare your base with piping gel. Brush a thin layer of gel with a kitchen brush evenly over the surface of your cake board.
- Lay your sugar paste as flat as possible on your cake board, making sure it spills evenly around the circumference. Then use a sugar paste smoother to flatten it out completely.
- Smooth the edges of your sugar paste with your fingers and trim the excess with a serving knife or scalpel tool.
- Let harden for at least 24 hours. You can then use your cake board covered with sugar paste.
