What is sugar paste and where does it come from?

The first steps in the development of sugar paste date back to the 1500s, when its ingredients were sugar, rose water, egg white, lemon juice and tragacanth. 

From the 17th to the 19th century, the term "icing" generally referred to a cake made of marzipan, which was a festive food. Marzipan was combined with sugar paste to carve centerpieces and candies.

In the mid to late 19th century, royal ices became popular and the technique of poaching with a sleeve was born. 

It wasn't until the 20th century that sugarpaste was used as an icing. It is believed that the British invented sugarpaste to cover fruit cakes with a softer layer to replace the hard royal icing, which was usually placed over marzipan. It was also discovered that sugar paste insulated wedding cakes on hot days, allowing them to keep longer.

Today, sugarpaste is becoming increasingly popular. Cakes can now take on infinite shapes and be adorned with an infinite combination of decorations, modeling, and sugar paste flowers.

Its taste is generally neutral, sweet with a slight vanilla flavor. You can flavour the sugar paste with food flavourings as you wish.

How do you cover a cake with the covering sugar paste?

To cover a cake with sugar paste, follow these steps:

  1. Start by preparing your cake. Make sure it is smooth and has an even surface.
  2. Spread the sugar dough on a clean, lightly floured surface to a thickness of about 3 to 4 mm. Use a rolling pin to roll out the sugar dough.
  3. Use a paring knife or cake design scalpel to cut the sugar paste to the size of your cake.
  4. Gently lift the sugar paste and place it on the cake. Smooth the surface with your hands or a straightener to remove any wrinkles or air bubbles.
  5. Use a sugar paste smoother to remove any remaining wrinkles and air bubbles. Start by smoothing the edges of the cake, then work toward the center.
  6. Use a knife to cut away excess sugar paste along the base of the cake.
  7. To decorate your cake, use colored sugar paste to create shapes or patterns. You can also use cookie cutters with ejectors to create different sized shapes.
