Glycerin is a multi-purpose product. It acts as a humectant in your baking recipes: it can be used to make royal icing less hard, to rehydrate sugar paste. It is also a component in the making of homemade sugar paste.
Adding a few teaspoons of glycerin to your cake batter before baking acts as a preservative, keeping that fresh feeling for a long time.
A touch of glycerin in royal icing adds shine and keeps your icing from becoming hard and dry. This makes it much easier to apply to cakes and ensures a smooth cut when cutting. Add 1 teaspoon of glycerin per 500g of confectioners' sugar for a smoother set and 2 teaspoons per 500g for a nice glossy finish.
Adding a small amount of glycerin when you heat sugar and water to a high temperature helps prevent the sugar from crystallizing. Glycerin is also a softening agent in candy, giving your caramels and truffles a soft, creamy consistency.
Like royal icing, glycerin can prevent buttercream from drying out and forming a crust.
