Food additives for cooking and baking

Food additives are substances added to foods to preserve flavor, improve appearance or extend shelf life. 

Additive groups used in baking:

  • Food coloring
  • Acidifiers (citric acid, tartaric acid, cream of tartar)
  • The emulsifier (lecithin)
  • Stabilizers (sorbitol)
  • Thickeners - gelling agents (pectin, Xanthan gum)
  • Leavening agents (baking powder): Baking powder, baking soda and cream of tartar are all food additives commonly used in baking. Baking powder is a combination of baking soda and cream of tartar. Baking soda is a leavening agent that is used to make baked goods rise. Cream of tartar is a stabilizer used to prevent the baking soda from reacting with other ingredients in the dough.
