What is cocoa butter?

It is a vegetable fat resulting from the pressure of the cocoa beans which makes it possible to obtain the cocoa powder. Cocoa butter is used in the composition of chocolate and has a naturally white/ivory color. Very resistant to cooking, its taste is neutral. 

How to use cocoa butter?

In cooking, it is used for example to temper chocolate. It is also used as an ingredient in confectionery or homemade spreads.

Colored cocoa butter is used to color chocolate. It is used either on the surface by filling the walls of a chocolate mold for example, or in the mass by integrating it into melted chocolate.
